Humanitas Health recipe: peas, leek and potatoes soup

“The velvety peas help to improve the cardiovascular system and during pregnancy it promotes a healthy development of the fetus, thanks to the high content of folic acid. If you want, you can make this dish even lighter by using water instead of vegetable broth. To accompany it, excellent slices of whole meal bread, instead of homemade, grilled toasted and radish provides inexhaustible source of vitamin C, mineral salts and important remineralizing, antiseptic and diuretic properties, also useful in the prevention of asthma.

 

Together with Dr. Elisabetta Macorsini, a nutritionist biologist from Humanitas, we understand how to prepare this healthy and nutritious dish:

 

Ingredients for 4 people

 

  • 500 g of peas

 

  • 1 leek

 

  • 2 potatoes

 

  • 400 ml vegetable broth

 

  • Extra virgin olive oil

 

  • Salt and pepper

 

  • 4 slices of homemade bread

 

  • Radish

 

Preparation

Cut the leek nicely eliminating the outer leaves, put it in a casserole with a couple tablespoons of oil, add two potatoes peeled and cut into cubes and add the peas.

Salt, pepper and season for a few minutes then cook for 20 minutes adding the vegetable broth.

Remove from the heat and blend with an immersion mixer until you get a smooth cream.

Cut the slices of homemade bread and toast them slightly.

Serve the pea cream in large bowls, adding a few toasted breads and finish with the radish stems.
