What are snap peas?

Considered a vegetable, snap peas (also known as mangetout) are actually a type of legume. In fact they belong to the Leguminoasae or Fabaceae family (genus Pisum, sativum species, variety called macrocarpon, full name "Pisum sativum macrocarpon".) This particular variety of pea is consumed whole, both the pod and the seeds contained in it. They are similar to the snow peas, but are slightly wider and flatter, and grow to approximately 10 centimeters. They should be consumed after cooking.

Although belonging to the family of legumes, snap peas can be considered from the point of view of their composition, as rich in water and fiber and low in protein and calories.

Snap peas have several beneficial properties. Thanks to their moderate glycemic index that characterizes them, snap peas are also suitable to be included in the diet of all people diabetic, but also obese or overweight, although you should watch for the insulin spikes. It is good not to eat snap peas overcooked because the vitamins and minerals they contain tend to deteriorate in contact with water and high temperatures.
